Inside a dark chocolate cocoa shaped shell, decorated with orange and yellow tints, Sacha´s fine cocoa interpretation is discovered. At least this is what Chef Andrea López tells us about her latest creation for República del Cacao chocolate-boutiques:
“I’m looking to rebuild Sacha´s fine cocoa complex flavors in a dessert that reflects the cocoa truly amazing delicacy. You do not expect to find the flavors you feel on the palate when you taste it.”
This delicacy called Cacao de Origen looks like a sculpture and a dessert at the same time. On the inside, visible between two halves of cocoa pods, it carries pure cocoa powder crumble, pineapple and cinnamon compote, accompanied by a 75% dark chocolate cremeux. And it is this particular chocolate that attracts our attention.
Dark chocolate, known for intense flavors, acid profiles and floral notes; tend to be preferred by chocolate connoisseurs. But when you try República del Cacao´s Amazonía 75% dark chocolate, you have to make a pause. It´s flavor fineness and clear notes of almonds, nuts and dried fruits are difficult to understand in a chocolate with such a high percentage of cocoa solids. One cannot believe such delicate flavor in a dark chocolate.
The subtleness of this chocolate is due in large part to the cocoa with which it is produced, Sacha fine cocoa, from the «La Joya de los Sachas» in Orellana province. A particular fine cacao with orange and warm reddish tones, harvested in small farms that share unique micro-climate, is the outcome of years of work by farmers who have taken care of this small treasure, that has spent much of its existence hidden in the northwest part of the Ecuadorian Amazon.
On the other hand, the velvety texture of the finished chocolate and the recipe that is required for its creation is achieved thanks to a careful process of development and ex-ceptional taste, which makes it a delicacy of special characteristics, surprising, unique.
Along with Chef López, two women carry forward the development and future of this chocolate, of the soil in which it grows, and the people who harvest and care for Sacha´s fine cacao: Anais Leroux, our expert in Research and development, and Marisol Choez, our field technician in the Amazon project. Anais works in the development and creation of República del Cacao´s chocolates, and Marisol in opening agricultural development spaces, hand in hand with farms with which the brand works in the Amazon.
